Clean Apple Pie Quinoa

So as I'm sure you know if you've been reading my posts I'm currently doing the Blogilates 8 week clean eating plan. All the recipes it includes are super tasty, and I am feeling a million times better after every single meal. This made me want my kickoff post for Sunday Yumday to be a healthy and clean recipe that everyone can adapt for their own enjoyment! I saw the original version of the recipe on Pinterest and tweaked it slightly for my own tastes. You can view the original here





Looks super yummy delicious, right? Yes right. And it is beyond simple, I promise you! Ok, here we go! Oh! ::Ingredients::

1/2 cup uncooked quinoa
1 cup water
1/2 tbsp unsalted butter or margerine
1 medium apple, cored and diced
2 tsp light brown sugar
1 tsp cinnamon
1/8 cup unsweetened almond milk
Chopped nuts of your choosing (optional, I used walnuts)

::Steps::

1. Pour the cup of water into a small pot and add the quinoa. Set to a medium-low heat and let cook, stirring occasionally, until there is no water left in the pot. Set aside.

2. Take a small skillet or frying pan and, over medium heat, melt half the butter. When melted, add in the apple slices and sauté until caramelized (cooked down and slightly clear). 

3. Sprinkle the brown sugar and cinnamon over the apples and stir. Then, pour in your milk and add the quinoa to the pan. 

4. Stir everything together and serve yummy and warm! I topped mine with a tiny sprinkle of chopped walnuts to add a little crunch. 

This is super simple, right guys? You have to try it out. Also, while I cut most of the original recipe in half, a serving size of quinoa is 1/4 of a cup, so this technically makes two servings, but if you eat it all, I promise not to tell!
