Banana Muffins with Honey-Blueberry Glaze

So I just made these, like, just made them. My house still smells of their yummy goodness and you can bet that I ate the one you're looking at right now. Oh yeah, it was warm and great. It's a shame M will have to eat them reheated when he's back from work, but at least he gets them at all, right? Right. I think I may bring some over to the new neighbor when she gets off work today, or perhaps give some to our sweet landlord because goodness knows M and I don't need 11 of these to ourselves. Muffins anyone?

I actually adapted this recipe from a new book I found on sale today at Barnes and Noble that was for tropical banana and passion fruit muffins. I didn't have any passion fruit at home, but I did have blueberries, so I tweaked it and here it is! Read on for the recipe!


::Ingredients::
-butter or margarine
-2 bananas
-2/3 cup milk
-2 cups flour
-1 tbsp baking powder
-pinch of salt
-heaping 1/2 cup light brown sugar
-2 eggs
-6 tbsp sunflower oil
-1 tsp vanilla extract
-2 cups blueberries
-2 tbsp honey


First step is to heat that oven of yours to 400 degrees F and either line a 12 muffin pan with liners, or if you're like me and you don't have and/or don't like liners because they steal parts of your hard-earned muffin, then you can smear butter or margarine around the cups and then sprinkle flour into them. Once you do that, tap the pan while turning it around to coat all the cups evenly with flour where you buttered it. This may seem crazy, but it is genius. Your muffins won't stick and your wrappers won't steal your muffin! 



Secondly, mash your bananas in a small bowl and then add the milk. I used silk unsweetened almond milk because I have a lactose intolerant boyfriend and after years of being allergic to milk myself, I prefer the taste of this stuff.


Next, sift together the flour, baking powder, and salt into a large bowl. Stir in the brown sugar. If you don't have a sifter like me, you can do as a poor college student would and use your strainer for loose leaf tea. It is a tad painstaking, but worth it.


In yet another different bowl, crack and lightly beat your eggs, then mix in the banana-milk mixture, then the oil, and vanilla.



Make a well in the dry ingredients and pour the banana mixture into it. Stir gently until just combined.


Spoon into muffin pan! You should have the perfect amount to fill each cup a generous amount with no left-over. Perfect!


Sweet! Stick them in the oven for 20 minutes. Remove when a nice light brown and you can stick a toothpick (or a chopstick if you have no toothpicks, like I) into the middle and pull it out clean. 

Now onto the blueberry topping! Take the two cups of berries and mash them in a small bowl. I just used a fork for this, it doesn't have to be perfect. Put mashed berries into a small saucepan. 


Next pour in the honey! You really didn't need a photo of this, but honey just looks pretty, right? I also added a small scoop of brown sugar just for good measure, but you don't have to do this, it's up to you.


Now just let this berry mixture simmer on the lowest heat while your muffins cook, stirring occasionally, and mashing any large berry hunks you find. It looks weird at first, but after a long simmer, it turns that pretty blue and smells amazing.


Take your muffins out and allow them to cool a bit before removing them.


See? They come right out! No wrappers needed! I forever owe M for showing me that trick. Plus, using papers seems so wasteful to me.


Now finally just top with your yummy warm berry goop and eat those babies up! Told you it'd turn a gorgeous color!

  1. I've been doing the butter and flour trick forever. Best thing ever!
    Also, this recipe looks yummy! I just wish I could find blueberries around here :(

    1. It's so genius! I feel ridiculous for never knowing it before! And you could really top it with any smashed fruit mixed with honey, I'm sure any would be good, heck, the muffins are yummy on their own haha. <3 Always love hearing from you girl
