Pumpkin Banana Honey Nut Cream Cheese Muffins // Recipe

     So when I originally made these, I made it into a loaf of bread for Michael as a surprise and it didn't cook all the way through, due to the batter or his janky oven, who knows, but I decided that the next time I'd bake them I'd make muffins and twerk the recipe. Here's where I got the original.
     Anyways, everyone I have made these for loved them, and my dad even demanded the recipe so that my mom could make them for him when I'm not around to whip them up, so that was pretty flattering. They are the absolutely perfect fall indulgence, fluffy and pumpkiny with a touch of sweet cream cheese. Yum. Also great for family or friend gatherings, as everyone can take their own muffin! They could even be made into mini muffins for bigger groups!


Ingredients:

2 ripe bananas, mashed
2 eggs
1/3 cup vegetable oil
1 1/3 cups canned pumpkin puree 
1/2 cup raw honey
1/3 cup orange juice
vanilla
1/2 cup white sugar
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1 container of honey nut cream cheese

Directions:

1. Preheat oven to 350 degrees F and grease or line your muffin tins

2. In a large bowl mix together the mashed bananas, eggs, vegetable oil, pumpkin, honey, OJ, a splash of vanilla, and sugar.

(I find the easiest way to mash bananas is on a plate with a fork)



3. Combine the flour, baking powder and soda, salt, pumpkin pie spice, and cinnamon in a small bowl. Stir this mix of the dry ingredients into the large bowl with the wet ingredients.



4. Scoop batter into your muffin tin and bake for around 22 minutes, checking periodically to make sure they don't burn. Always remember to poke through the middle of one with a toothpick (or a thin knife) to make sure they're done all the way. 


5. Take the muffins out and give them time to cool. Once you can hold them (or you can do it while it's hot if you want a drippy but delicious warm mess), frost the top with the honey nut cream cheese, then drizzle some honey over it, and top it off with a light sprinkle of the pumpkin pie spice! Now you have some amazingly delicious and seasonal treats to give to all your friends, or just eat by yourself (no judgement).
